You will love this apple cake made with fresh apples and the cream cheese frosting really makes it good!

4 cups apples, grated
2 eggs
2 cups sugar
1/2 cup cooking oil
2 cups all-purpose flour
2 tsp. soda
2 tsp. cinnamon
Pinch salt
2 tsp. vanilla
1 cup nuts (optional)
In a large bowl mix all ingredients together with mixer. Bake in a 9 x 13 inch pan sprayed with pam at 350 degrees for 45 minutes. Cool.
(Note: I have used every kind of apple you can buy in this cake. I just peel and grate the apples on one of those tin hand graters)
Cream cheese frosting:
1 (8 oz.) pkg. cream cheese, softened
1 stick margarine, softened
1 box confectionary sugar (16 oz)
1 tsp. vanilla
Whip all frosting ingredients together with mixer until smooth and of spreading consistency.
This cake is also wonderful with caramel frosting like the one on my jam cake recipe on this blog.
I used to take this cake to work when we had special dinners and everyone loved it. I never brought any back home!

  4. Love apple cakes! With cream cheese frosting, how can I say no? So yummy!

    • When I bake a cake like this or a spice cake, I’ve eliminated the frosting and pour a jar of baby food fruit pudding over the top – yum. Wish I could go out and pick my own NY state apples right now, my mouth is watering .
