This coffee cake is to die for! I could eat the whole thing by myself. The chocolate, peanut butter and banana make this a great snack with a glass of milk. It’s good as a dessert and wonderful with coffee.1/2 cup crunchy peanut butter 1/2 cup brown sugar 2 eggs 1/2 cup butter or margarine or 8 tablespoons, melted 2 medium bananas, mashed 1/2 cup buttermilk 1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/8 teaspoon salt In a large mixing bowl, using a spoon, stir together the peanut butter, brown sugar, eggs, melted butter, mashed bananas and buttermilk. In a smaller bowl whisk together the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the wet ingredients and mix well with a spoon. Spray a 9 x 9 inch backing dish with cooking spray and pour mixture into dish. Add topping below. Topping: 1/4 cup brown sugar 1/4 cup all-purpose flour 1/4 cup crunchy peanut butter 1/3 cup quick-cooking oats 1 cup chocolate chips 4 tablespoons butter or margarine, cut in small pieces Combine the sugar, flour, peanut butter, and oats. Mix until like crumbs. Sprinkle over coffee cake. Add chocolate chips and butter on top. Cook in preheated 350 degree oven 55 to 60 minutes until center is done.
