Today is National Waffle Day! These waffles make a wonderful addition to any breakfast or brunch. They are good for you, too!
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup quick cooking oats, uncooked
1 tablespoon sugar
3 teaspoons baking powder
1 1/2 cups milk (can use skim)
2 tablespoons canola oil or vegetable oil
1 egg
1 cup fresh blueberries (can use frozen blueberries and could use other kinds of fruit, too)
1/2 cup pecans
Mix first seven ingredients in a large bowl with a spoon. Fold in blueberries and pecans. Spray waffle iron with cooking spray. Cook as you would any waffles.
Serve with honey or syrup of your choice. Top with more blueberries or fruit. Enjoy!

I love waffles for a weekend breakfast. I’m not sure why I said “weekend,” since I’m retired and it’s all weekend to me!
