This is a great breakfast muffin and one you will enjoy just anytime.1/2 pound pork sausage 1/3 cup green onions, chopped (can use regular onions) 1/3 green pepper, chopped 1/4 cup salsa (I use chunky salsa) 2 cups all-purpose flour 3 teaspoons baking powder 2 tablespoons sugar 1/2 teaspoon dry mustard 1 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon black pepper 2 eggs 1/4 cup or 4 tablespoons butter or margarine, melted 1 cup milk 3/4 to 1 cup shredded cheese of your choice (I use 4 Cheese Mexican) Cook sausage, onion and green pepper in a skillet on top of the stove until sausage is cooked. Drain and set aside. In a bowl combine flour, baking powder, sugar, dry mustard, pepper, salt and garlic powder and whisk together. Add milk, eggs, salsa and melted butter and stir with a spoon. Using a spoon mix sausage mixture into the flour mixture. Spoon into a sprayed muffin tin, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each muffin. Bake in preheated 375 degree oven for 25 to 30 minutes. Makes 12 muffins. Enjoy!
