Fruit salads are so good this time of the year. This spinach and fruit salad is a favorite of my family.
2 to 3 cups fresh spinach
1 cup strawberries, cut in pieces
1 cup blueberries
1/2 cup walnut pieces
1 large apple, chopped
1 large pear, chopped
Combine all ingredients and toss well. Can add dressing to entire salad or let each person add their own dressing. Note: You can use all kinds of your favorite fruit and nuts such as kiwi, bananas, oranges, almonds. We like nuts better in salads than croutons and they are much better for you. Makes about 6 servings. Enjoy!
Poppy Seed Dressing
1/3 cup sugar
1/4 cup honey
1 1/2 teaspoons dry mustard
1/4 cup red wine vinegar
1/3 cup oil
1 tablespoon poppy seed
Mix all ingredients well in salad shaker or can use blender. Makes about 1 1/2 cups. Chill.
