My family loves quiche and we especially like this one. The bacon combined with spinach and cheese makes this a great dish and an easy fix, too.

1 (10 ounce) bag fresh spinach, finely chopped
1/2 cup onion, chopped (can use green onions)
4 eggs
1/2 cup milk
2 tablespoons butter or margarine, melted
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon black pepper
5 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 tablespoon Parmesan cheese
1 (9 inch) pie shell
In a large bowl combine chopped spinach, onion, eggs, milk and butter mixing well with a spoon. In another bowl whisk together flour, baking powder and black pepper. Add to spinach and mix with spoon. Fold in crumbled bacon and cheese.  Pour into pie shell. Sprinkle top with Parmesan cheese.  Bake in preheated 350 degree oven for 40 to 45 minutes.  Let cool for 10 to 15 minutes before slicing.  Makes about 8 slices.  Enjoy!

  1. I am making this for dinner for the second time. It is so good; it tastes like the quiche I would get from our deli that sold for $6 a slice! The only difference I did making it the second time was that I used frozen spinach in place of the fresh spinach, and only because it was easier. I have shared this recipe with family and I will keep this recipe with my family favorites! 5 Stars*****

    Do you know if coconut flour or flaxseed meal could be substituted for the binding agent in the quiche?

  4. I think this will be our Sunday dinner tonight, but I am gonna go outside and cut some collard greens to substilute for the spinacn. Will let you know how that turns out!

      • I do quiches all the time and pies without crusts. You just have to spray pan with Pam or grease it before you put quiche or pie into it. It comes out fine and a lot less calories, cholesterol and fat. Even my husband liked it without the crust. Give it a try. I did the one she posted last week without the crust in a pie plate sprayed with Pam and it came out fine. Good luck.
