2 cups whole wheat flour
1 cup regular flour
2 tsp. baking powder
1 tsp. baking soda
1 cup brown sugar
1/2 cup regular sugar
2 tsp. cinnamon
1/2 cup oil
1/2 cup sour cream
3 medium bananas, mashed
4 Tbs. soft butter or margarine
2 Tbs. whole wheat flour
4 Tbs.quick-cooking oats, uncooked
2 Tbs. brown sugar
1 tsp. cinnamon
3/4 cup broken walnut pieces (optional)
Combine flour, baking soda, baking powder, cinnamon and sugar in a large bowl. Add eggs, oil, sour cream and bananas and mix just until all ingredients are wet. Pour into two greased or sprayed loaf pans. In another bowl, combine the topping ingredients and mix together. Spread this on top of the batter. Bake at 350 degrees for 45 to 50 minutes. Makes two loaves.
This is wonderful served with butter and a hot cup of coffee in the mornings or just as a snack anytime. Enjoy!
