HOLIDAY BAKED SWEET POTATOES

This is a great recipe for Thanksgiving or Christmas.  We like it anytime!

2 – 3 large sweet potatoes, boiled, peeled and mashed
1/4 cup butter or margarine
1/4 cup milk
1 egg, beaten
1 teaspoon vanilla flavoring
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2 tablespoons sorghum molasses or molasses of your choice(optional)
1/2 cup sugar
 
Cover sweet potatoes with water in a pot and boil until done. Immediately run cold water over the potatoes to stop the cooking process. Peel and mash with hand potato masher.  Add butter, sugar, milk, vanilla, nutmeg, cinnamon, molasses and beaten egg.  Stir well.  Pour into a sprayed 9 x 9 inch casserole dish. Add the topping below:
Topping
1/2 cup brown sugar
1/2 cup all-purpose flour
1/2 cup butter or margarine, cut into pieces
1/2 cup walnut or pecan pieces
Mix together the topping ingredients in a bowl and sprinkle over the sweet potatoes. 
 
Bake in preheated 375 degree oven 35 to 45 minutes. 
 
This makes about six servings.  You can double the recipe.  You could also add marshmellows to the topping.  Enjoy!

  1. I love this sweet potato casserole, Judy, but I’m the only one in my family who does! I used to make it for Thanksgiving, but I’d end up eating the whole darn thing myself (not all at once, mind you!). So, now, I just enjoy it at other folk’s houses—-I’ll be up there tomorrow! Haha…just kididing, though I know I’d love sitting at your table. :-)

    By the way, I’ve never seen it with molasses in it. I might have to make some just to see what that tastes like.

  3. I need to try this with molasses next time at Thanksgiving. I know what I will do 2 weeks before the holidays….look here for all my dishes.
