TODAY IS KENTUCKY DAY ON THE SOUTHERN LADY COOKS!

I would like to take this opportunity to welcome everyone on my site to Kentucky Day! Two weeks ago on my Facebook page, I had everyone give a shout out to their state. The state with the most shoutouts got a day on the site to post recipes, jokes, pictures, facts about their state or anything interesting they wanted to post. The great state of Texas had the most members to answer the call on that day and we had a great day honoring their state. We had so much fun, we decided to do it again last Monday with the next state that came in second on the list. That state was Georgia and everyone enjoyed the recipes and Georgia fans. This week and third is Kentucky!  We are all looking forward to the Kentucky fans showing us a great day on The Southern Lady Cooks. (Since Kentucky is the home of this Southern lady and this site, I am hoping all you fellow Kentuckians out there will contribute some great stuff today and make us all proud).

If you are not a fan on Facebook, you might want to click on the link below and check out all your Kentucky friends.  We will be posting recipes and some great stuff about this state.

The Kentucky Horse Park, Churchill Downs and Keeneland Race Tracks are must see attractions in Kentucky. The most beautiful horse farms in the world surround Lexington, Kentucky!

Kentucky has lots of great restaurants, great cooks, and food bloggers.  You will be able to check out some of their sites and recipes today on The Southern Lady Cooks Facebook page.

I am going to list a few of my Kentucky recipes here for those of you not on Facebook.  Woodford Pudding is a great Kentucky recipe, along with Kentucky Butter Cake with Rum Sauce and Kentucky Chocolate Chip Bourbon Pie.

  2. This is a recipe for Red Velvet Cake Icing that has been used in my family for over 45 years. This is the recipe we used in Home Ec. class back in the late 60′s when I was in high school at Mt. Sterling, KY. The icing recipe is what makes is different from most you find today in that it is NOT a creme cheese icing. It’s been a favorite of ours for decades & someone always makes it for me on my Christmas birthday when our family gets together for the holidays!! Sure hope you will try it. Bake your favorite Red Velvet Cake (I have a scratch recipe for that too if anyone wants it), turn out from the pans & let cool. I usually start this icing while the cake is baking as the ‘pudding’ has to cool.

    Icing

    1/4 cup flour
    1 cup milk
    Cook together in saucepan over medium heat until thickened, stirring frequently with a wisk to avoid lumps. Set aside to cool. This is the ‘pudding’.

    Cream VERY thoroughly
    1 stick margarine
    1/2 cup solid vegetable shortening
    1 cup sugar
    1 teaspoon vanilla
    cream with mixer until you can’t feel sugar granuals when you rub a small amount between your fingers. Then add the ‘pudding’ & beat until fluffy, spread over the cake. Refrigerate any leftover cake. I love it better after it’s been in the refrigerator for a day.

    This is not an overly sweet icing but compliments the red velvet cake beautifully. Enjoy!!!
