LEMON BANANA POPPY SEED MUFFINS

Lemon Banana Poppy Seed Muffins - CopyThis is such an easy, quick recipe for poppy seed muffins and they taste like you spent hours making them.  We love the great lemon taste with just a bit of banana!

1 box Betty Crocker Moist Lemon Cake Mix with pudding in the mix
1 cup milk
1/2 cup oil (I use Canola)
2 eggs
2 bananas, mashed
1 tablespoon poppy seeds
1/2 cup nuts of your choice, optional

Mix cake mix, oil, milk, and eggs with mixer.  Fold in mashed bananas and add poppy seed.  Spray muffin tins and bake in preheated 350 degree oven 15 – 20 minutes.  Makes 16 to 18 muffins depending on size you make them.

Glaze for Muffins:

1/2 to 1 cup powdered sugar
2 to 3 tablespoons lemon juice

In a small bowl whisk together enough powdered sugar and lemon juice to make it runny.  Drizzle over warm muffins.   Enjoy!

  1. i like the addition of the banana here and the fact that these are easy to make. It also makes use of some of that big bottle of poppy seeds I have.

  4. Yummy! Think I will make these for this weekend. Love that they are quick & easy. I don’t know if I would have thought to combine lemon & banana otherwise. Looking forward to trying them.

  5. I will take a dozen of these. Just box them up and send ‘em!!!

  6. They look very good and i’m sure it was a great idea to add the poppy seeds!

  7. I tried this recipe amd they were easy but very, very bland. I used the exact list of ingredients, and followed the instructions. Won’t make them again.
