These  cookies made with honey will spice up your day!

2 eggs
1/2 teaspoon vanilla flavoring
1 cup honey
1 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups all-purpose flour
1 cup walnut pieces
In a large mixing bowl whisk together eggs, honey, sugar, and vanilla.  Add baking soda, cinnamon, and flour and mix well.   Fold in walnuts.  Spray a cookie sheet.  Roll dough into balls with your hands and flatten with a fork dipped in sugar. (Can sprinkle more sugar over tops).
Bake in preheated 350 degree oven 10 to 15 minutes until golden brown on tops. Makes 2 to 3 dozen depending on size you make the.   Enjoy!

      They are not real soft but I guess you could say they are more soft than hard. Does that make any sense? lol.
