Each year when fall is in the air, I want to bake cookies. These cookies are so easy to make and so good chocked full of nuts and spices. Just the aroma in your kitchen while these are baking will make your mouth water to taste these morsels.
1 super moist Betty Crocker Carrot Cake Mix
2 eggs
1/2 cup oil
1 cup walnuts
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 cup sugar
Mix together cake mix, eggs, spices and oil in a bowl using a spoon to mix. Fold in nuts. Roll pieces of the dough about the size of a walnut into balls with your hands. Put the 1/4 cup sugar on a dish and roll the dough balls in the sugar. Place cookies on a sprayed cookie sheet and mash flat with a fork dipped in the sugar. Cook in preheated 375 degree oven for 12 to 15 minutes. Makes about 2 1/2 dozen cookies depending on size. Enjoy!

I thought I would get here and find out I had to scrape endless carrots on a grater.. what a lovely surprise your recipe is!! It is much simpler than I expected and looks so delicious. I’m still in BC but will try these for my daughter when I get back home. Perfect cookie for fall!
I like easy recipes, too. Especially, when my grandson is on his way to my house and I have to come up with something quick. Cookie monsters just won’t take “no” for an answer!

These look good. I used pineapple on my homemade pizza just now. Will fold some of that in and switch to almonds ( since I have them on hand!). Looks good. Thats a tomorrow cookie! Just finished a 17 mi bike ride. So, no more cooking tonight.
