PINEAPPLE BANANA CAKE WITH CARAMEL SAUCE

This cake is so good. The pineapple along with the bananas is great but add the caramel sauce and it is wonderful. Cakes are one of my favorite things to make in the kitchen. I think you and your family will love this one.

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/4 cups oil (I used Canola)
1 (8 ounce) can pineapple, crushed and undrained
2 teaspoons vanilla flavoring
3 eggs
3 bananas, mashed
1 cup walnut pieces
 
Mix together flour, baking soda, cinnamon, salt, and sugar.  Stir in oil, pineapple, vanilla, eggs and bananas. Fold in nuts.  I mixed this cake by hand just enough to wet all ingredients. Don’t overmix.  Pour into sprayed cake pan and bake in preheated 350 degree oven for 60 to 70 minutes until center is done.  Let cool for about 20 minutes before removing from pan.
Caramel Sauce
1 cup brown sugar
1/2 cup white sugar
1/3 cup evaporated milk (could use regular milk)
1/4 cup butter or margarine or 4 tablespoons
1 tablespoon corn syrup
1/4 teaspoon salt
1 teaspoon vanilla flavoring
 
Bring all ingredients but vanilla to boil, stirring constantly.  Boil 1 minute, remove and add vanilla.  Drizzle over cake. (I let this sauce sit for about 15 minutes to get to the right consistency to pour over the cake. Then I put it in a small pitcher before pouring).

  6. Oh my! This one looks awesome as well. I just bought me a new bundt pan. Hmm…..maybe I should put it to use with this cake :)
