We love sandwiches for lunch anytime, but especially in the summer. Tuna salad is a favorite. Serve on a bed of lettuce with fresh tomatoes or on bread for a great sandwich.
2 (5 ounce) cans tuna in water, drained
1/4 cup celery, finely chopped
1/4 onion, finely chopped
2 tablespoons sweet pickle relish
2 tablespoons mayonnaise
2 eggs, boiled, peeled and chopped
1/8 teaspoon pepper
1/4 teaspoon salt
Mix all ingredients in a bowl. Chill for several hours or can serve at room temperature. Makes great sandwiches. Enjoy!
