Guest Fan Post #3 from Jenn Grafton – Recipes for Hashbrown Casserole and Banana Yogurt Smoothies

I am pleased to present our third guest fan post from Jenn Grafton.

After becoming a single mother of two kids and losing a nice income every month I began looking for cheaper meals that would be kid friendly as well. I have always loved to cook and my daughter who is four is a big help in the kitchen. Most of my recipes are for larger families but for us they are great as I can save a great portion for another meal at a later date. This recipe is also very filling and perfect for those cold days, like the ones we get out here in Alberta Canada.

HASHBROWN CASSEROLE

1 pkg favorite diced hash browns

1 med carton Sour Cream

1 Can Cream soup (Mushroom, Broccoli, Chicken, Asparagus etc) “I prefer Chicken or Broccoli”

1 Cup Grated Cheddar cheese ( I use Old)

1/2 cup melted butter or margarine

1 cup corn flakes

2 tbsps melted butter or margarine.

Preheat oven to 400. Grease baking dish.

In large bowl mix first five (5) ingredients.

Pour contents into greased baking dish. Smooth and even out.

Bake for approx. 30 mins or until heated almost all the way through and starting to brown on top.

Take out of oven, turn temp down to 300

Top casserole with corn flakes and sprinkle remaining butter on top.

Place back in oven and continue cooking until heated through and corn flakes are browned.

Let stand 5-10 mins.

Cut, serve, and enjoy :)

Variation : In place of Corn Flakes you can cover top in more shredded cheese also very good.

If using Broccoli soup – add 1 cup chopped frozen broccoli florets

Mushroom Soup – 2 cups fresh sliced mushrooms, Fried in tbsp butter/margarine. Mix into hash.

Works well with Low Fat soups and sour cream as well :)

My daughters favorite thing to make BANANA YOGURT SMOOTHIES- she makes these all by herself,  they are that easy :)

Blender

6-8 ice cubes

2 small or 1 large banana

1 1/2 cups plain, or vanilla yogurt

1 cup orange juice

Blend till smooth

makes 2 large glasses or about 4 smaller cups :)

Thank you so much Jenn for the great recipes and for being a guest on The Southern Lady Cooks.  You have a beautiful family.
