Creamy Chicken Enchiladas
1 T. butter
1 med. onion, chopped
1 small can chopped green chilies, drained
8 oz. cream cheese, softened & cut into pieces
3 1/2 cup cooked chicken, diced
8 flour tortillas
8 oz. Monterey Jack cheese, shredded
2 cups whipping cream
Melt butter in large skillet, add onions & saute’ for 5 minutes ~ add in green chilies & saute for a couple of minutes. Stir in cream cheese and chicken, stir constantly til cream cheese is melted. Take a tortilla, spoon in the mixture (in the center) place rolled/wrapped tortilla, in a lightly greased baking dish ~ sprinkle with cheese’s & pour whipping cream over the top ~ bake 350 degrees for 30-40 minutes~!
( you can add refried beans, if you’d like ~ on top of the chicken mixture, prior to wrapping the tortilla)
