BUTTERSCOTCH PEANUT BUTTER COOKIES

These peanut butter cookies with butterscotch chips will melt in your mouth. They never last long at my house! Children and adults will love these yummy snacks.

1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter or margarine
1/2 cup crunchy peanut butter
1 teaspoon vanilla
1 egg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup butterscotch chips
1/2 cup walnuts or nuts of your choice
                                                             
In a large bowl, beat sugars, margarine and peanut butter until light and fluffy.  Add vanilla and egg; blend well.  Stir in flour, baking soda and salt;  mix well.  Fold in butterscotch chips and nuts.  Shape dough into 1 inch balls.  Place 2 inches apart on ungreased cookie sheets.  Flatten with fork dipped in sugar.  Bake in preheated 375 degree oven for 8 to 10 minutes or until golden brown.  Remove from cookie sheets immediately and cool completely.  Makes 4 to 5 dozen depending on size.   Enjoy!

  2. These look so fluffy and beautiful! They wouldn’t last 5 minutes in my apartment. Actually, 4 minutes might be pushing it even.
