These peanut butter cookies with butterscotch chips will melt in your mouth. They never last long at my house! Children and adults will love these yummy snacks.1/2 cup sugar 1/2 cup brown sugar 3/4 cup butter or margarine 1/2 cup crunchy peanut butter 1 teaspoon vanilla 1 egg 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 2/3 cup butterscotch chips 1/2 cup walnuts or nuts of your choice In a large bowl, beat sugars, margarine and peanut butter until light and fluffy. Add vanilla and egg; blend well. Stir in flour, baking soda and salt; mix well. Fold in butterscotch chips and nuts. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten with fork dipped in sugar. Bake in preheated 375 degree oven for 8 to 10 minutes or until golden brown. Remove from cookie sheets immediately and cool completely.
