Smother these pancakes with your favorite syrup, honey or sorghum and you have a wonderful breakfast treat for children and adults, too.
2 ripe bananas, chopped
1/2 cup blueberries, fresh or frozen
1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg
3/4 cup buttermilk
1/2 stick butter or margarine
Mix bananas, egg, milk, vanilla in a large bowl with a spoon. Add flour, sugar, soda, baking powder, salt and cinnamon. Fold in blueberries. Fry the pancakes in butter using a little each time. Don’t put all the margarine in the skillet at one time. (Note: I always fry pancakes in butter. I think it makes them so much better).
I used a 1/4 cup measuring cup to measure the batter for each pancake. Makes 10 pancakes. Enjoy!
Note: You don’t have to add the blueberries. The pancakes are great with just the bananas or you can add nuts. I like them with a handful of walnuts added, too.

My daughter was just talking about adding blue berries to pancakes so tonight I mentioned your recipe adding bananas also and she is going to try that. thanks for the idea
