Applesauce Muffins This recipe can be made as muffins or as a cake. It is different from the Applesauce Cake Recipe I have already listed on here.
2 sticks butter or margarine
2 cups white sugar
1 egg
2 cups applesauce
1 tsp. cinnamon
1/2 tsp. nutmeg
1 3/4 tsp. baking soda
1 tsp. vanilla
1 cup raisins
3 cups all-purpose flour
1 cup nuts (optional)
Preheat oven to 300 degrees. Cream butter, sugar, and egg. Add remaining ingredients and mix well. Spray cake pans or muffin tins or can use cupcake papers. Bake for one hour in oblong pan if you are making a cake or 40 minutes for muffins. Makes about 2 dozen muffins.
These are wonderful with milk as a snack or served with coffee in the morning.
