APPLESAUCE MUFFINS

These applesauce muffins are wonderful with coffee or as a snack anytime.  We love having these applesauce muffins on hand for breakfast.  They keep well in the fridge and can be reheated.
1 stick butter or margarine or 8 tablespoons or 1/2 cup, softened
1/2 cup white granulated sugar
2 eggs
1 cup applesauce
1 tsp. cinnamon
1/2 tsp. nutmeg
1  tsp. baking soda
1 tsp. vanilla extract
2 cups all-purpose flour
1 cup raisins, (optional)
1 cup nuts (optional) walnuts or pecans
Preheat oven to 350 degrees. Cream butter, sugar, and egg. Add remaining ingredients and mix well. Spray muffin tin. Bake in preheated 350 degree oven for 30 to 35 minutes.  Children will love these applesauce muffins with milk for a snack.  Makes 12 large muffins. Enjoy!
