When my children were young and we lived on the farm, we killed our own beef every year. I always had a freezer full of meat and there was more hamburger than anything else, so I used to make vegetable soup with hamburger. All my children loved it and still do today.
1 1/2 – 2 lbs hamburger
3 or 4 carrots, sliced
1 large onion, chopped
6 or 7 medium potatoes peeled and cut up
2 or 3 stalks of celery chopped
1 pkg frozen corn
1 pkg frozen okra
1 (48 oz. can) tomato juice
1 tablespoon chili powder
2 tablespoons worcestershire sauce
salt and pepper to taste
Brown hamburger in skillet, drain. In a large soup pot, add all the ingredients except tomato juice. Add enough water to just cover the vegetables and simmer until potatoes and carrots are soft. Add tomato juice and continue to simmer on low heat for about 30 to 45 minutes. Serve with cornbread muffins. Enjoy! This makes about a gallon of soup and freezes well or keeps in refrigerator for several days.
